GARBANZO MEDITERRANEAN FRESH TO OPEN IN FORMER COMPANION SPOT IN CLAYTON
The fast-casual restaurant chain has submitted an application with the city to open at Maryland and Forsyth in the space that previously held Companion Bake House and Cafe. The homegrown bread company closed that location last October.
The company’s plans include a 46-seat cafe, along with outdoor dining and seven-day-a-week service from 11 a.m. to 10 p.m. The cost of a remodel to the Companion space is estimated at $300,000, according to paperwork submitted to Clayton.
Originally known as Garbanzo Mediterranean Grill, the company was founded in the Denver area and has grown to 23 locations across the nation, most of them in Colorado. It offers a Middle Eastern spin on the Chipotle model, offering salads, bowls, burritos, pitas or plates, only with your choice of protein supplemented with standards such as hummus and tabbouleh instead of salsa.   Read more here
